Marinated Pot Roast

Place the vinegar, water, onion, carrot, celery, garlic, bay leaves, and peppercorns in a saucepan. Bring to a boil, then simmer for 5 minutes. Cool completely to room temperature.

Put the beef in a nonreactive container and pour the cooled marinade over it. Cover and refrigerate for 24 to 48 hours, turning the roast once or twice.

Remove the beef from the marinade and pat it very dry. Strain the marinade, reserving both the liquid and vegetables, and season the beef evenly with salt.

Heat the oil in a large Dutch oven over medium-high heat. Sear the beef for 3 to 4 minutes per side, working until all sides are deeply browned. Transfer it to a plate.

Add the reserved marinade vegetables to the pot and saute for 6 to 8 minutes, stirring until softened and lightly browned. Pour in the separately reserved strained marinade liquid and stock, scraping up the browned bits.

Return the beef to the pot. Bring the liquid to a simmer, cover tightly, and roast in a 160°C oven for 3 to 3 1/2 hours, turning the roast once, until a fork slides in easily, the meat is very tender, and its center reaches about 93°C.

Transfer the roast to a board and tent it loosely with foil. Strain the braising liquid into a saucepan, pressing gently on the vegetables, then skim excess fat. Simmer the liquid for 10 minutes to concentrate its flavor.

Whisk 100 g of finely crushed gingersnap cookie crumbs and the brown sugar into the sauce a little at a time. Simmer for 5 to 8 minutes, whisking occasionally, until smooth enough to coat a spoon. Taste and adjust the salt and acidity.

Slice the rested beef across the grain and arrange it on a warm platter. Spoon over some sauce and serve the remaining sauce at the table.
