Zubereitung

Place the water in a saucepan and bring it just to a boil, then remove it from the heat so it remains very hot but is no longer bubbling vigorously.

Put the green tea in a heatproof teapot. Add about 150 ml of the hot water, swirl for 10 seconds to rinse the leaves, and pour that liquid away.

Add the remaining hot water, spearmint, and sugar to the teapot. Return the pot to very low heat, or place it over a diffuser, and simmer gently for 5 minutes; the tea should become fragrant without a rolling boil.

Stir the tea by pouring one glassful into a heatproof glass and returning it to the pot twice. Pour the tea into small glasses from a slight height, garnish with reserved mint, and serve immediately while hot.
