Return the potato starch to the grated mixture. Stir in the beaten eggs, potato starch, salt, and black pepper until evenly combined. Let the batter rest for 5 minutes while the starch thickens it slightly.

Heat the sunflower oil in a large heavy skillet over medium-high heat until a small dab of batter sizzles immediately. Use about 2 tablespoons of batter for each pancake, flattening each into a thin round about 8 cm wide.

Fry the pancakes for 3–4 minutes on the first side, adjusting the heat so the edges bubble steadily without darkening too quickly. Turn and fry for another 2–3 minutes, until both sides are deep golden brown and the centers are firm.

Transfer the cooked pancakes to a wire rack set over a tray and season lightly with salt if needed. Continue frying the remaining batter, adding a little more oil when the pan looks dry and bringing it back to a steady sizzle between batches.
