Arrange the cornichons and pickled pearl onions in small serving bowls. Lay the prosciutto and smoked ham on a platter, keeping the slices loosely folded so they are easy to take.

Heat a raclette grill according to its manufacturer’s instructions, or heat the broiler to high. Place the cooked potatoes in a warm serving dish and season lightly with black pepper.

Place one or two slices of raclette cheese in each raclette pan, or arrange the slices on a broiler-safe tray. Heat for 2–4 minutes, until the surface is glossy, bubbling, and lightly browned at the edges.

Scrape the melted cheese over the warm potatoes and scatter with chives. Serve immediately with the pickles, onions, and charcuterie, repeating the melting process as guests are ready for more.
