Place the veal cutlets between sheets of parchment and gently pound them to about 3 mm thick. Lay one slice of prosciutto and two sage leaves on each cutlet, pressing lightly so they adhere.

Spread the flour in a shallow dish. Turn each cutlet prosciutto-side up and dust only the plain underside with flour, shaking off the excess so the sauce will not become heavy.

Heat the olive oil in a large skillet over medium-high heat until it shimmers. Arrange the cutlets prosciutto-side down without crowding and sear for 2 minutes, until the prosciutto is lightly crisp.

Turn the cutlets and cook the floured side for 60 to 90 seconds, just until browned and the veal reaches 63°C/145°F in the thickest part. Transfer to a warm plate and loosely cover to rest for 3 minutes.

Pour the white wine into the skillet and scrape up the browned bits with a wooden spoon. Simmer for 2 to 3 minutes, until reduced by roughly half and the sharp alcohol aroma has softened.

Add the warm chicken stock and simmer for 3 to 4 minutes, until the liquid lightly coats a spoon. Remove the skillet from the heat and whisk in the cold butter a few cubes at a time until glossy.

Return the cutlets and any collected juices to the skillet prosciutto-side up. Spoon the sauce over them and warm gently for 30 seconds without boiling, then serve with lemon wedges.
