Return the beef and any accumulated juices to the pot. The liquid should reach about two-thirds up the meat. Cover, reduce the heat to low, and simmer gently for 3 to 3 1/2 hours, turning the pieces once, until a fork slides in easily and the beef reaches at least 90°C.
