Heat the oven to 180°C. Grease and line the base of a 23 cm round cake pan with parchment.

Whisk the flour, cocoa powder, baking powder, salt, and half of the sugar in a bowl. In a separate large bowl, whisk the eggs with the remaining sugar for 6–8 minutes, until very pale, thick, and able to leave a ribbon on the surface.

Fold the dry ingredients into the egg mixture in three additions. Fold in the cooled butter and coffee just until no streaks remain; do not deflate the batter.

Pour the batter into the prepared pan and bake for 28–30 minutes, until the center springs back and a skewer inserted in the middle comes out with only a few moist crumbs.

Cool the cake in the pan for 10 minutes, then turn it onto a rack and cool completely. Chill for at least 30 minutes before slicing horizontally into three even layers.

Combine the reserved cherry juice and 50 g of the sugar in a saucepan. Bring to a boil, whisk the cornstarch with 2 tablespoons of cold water, then whisk it into the juice and simmer for 1–2 minutes until glossy and thick. Stir in the cherries and 30 ml kirsch, then cool completely.

Pour the chilled heavy cream into a cold bowl and add the remaining 50 g sugar and 30 ml kirsch. Whip on medium speed for 2–3 minutes, then increase briefly until medium-stiff peaks form: when the whisk is lifted, the peak should stand with a slight bend while the cream remains smooth and spreadable. Stop immediately to avoid graininess.

Place the first cake layer on a serving plate and brush it with some of the cherry syrup. Spread over one-third of the cream and half of the cooled cherry filling. Repeat with the second layer, using the remaining half of the cherry filling, then top with the final layer and cover the cake with the remaining cream.

Press the chocolate shavings around the sides and scatter them over the top. Decorate with a few cherries, then chill for at least 2 hours before slicing with a warm, dry knife.
