Butter Sheet Cake

A traditional German Butterkuchen made from an airy yeast dough spread thin in a sheet pan, deeply dimpled with butter, and finished with sliced almonds and a brittle caramelized sugar crust. The tender bready crumb, molten butter pockets, and crackling almond topping create its signature character.

Cómo preparar

1
Combine the lukewarm milk, yeast, and 1 tablespoon of the sugar in a large bowl. Rest for 5 minutes, until a thin foamy layer forms on the surface.
2
Add the flour, salt, egg, and 55 g of the softened butter. Mix until a shaggy dough forms, then knead for 7 to 9 minutes, until smooth, elastic, and only slightly tacky.
3
Cover the bowl and place it in a warm, draft-free spot at 24–27°C for 60–75 minutes. Check after 60 minutes: the dough should look aerated and nearly doubled, with a domed surface. Press a floured fingertip about 1 cm into the dough; the indentation should slowly spring back but remain visible, indicating it is ready to shape.
4
Grease a 23 by 33 cm baking pan with 15 g of the softened butter. Press and stretch the dough evenly into the pan, then cover and rest for 20 minutes while the oven heats to 180°C.
5
Use a fingertip to make shallow dimples across the dough. Reserve the remaining 100 g of softened butter for this topping step, press it firmly into the dimples, then scatter the remaining portion of the divided sugar evenly over the buttered surface, followed by the sliced almonds.
6
Bake on the middle rack for 22 to 25 minutes, until the edges are deep golden, the almonds are toasted, and the center springs back lightly when pressed.

Por qué funciona esta receta

The yeast dough creates a tender, bready base rather than a sponge, while butter wells enrich it from within. Almonds and sugar bake into a thin crackling crust, giving deliberate contrast to the soft crumb.
