Mix the softened butter with the grated Garlic and chopped Flat-leaf parsley. Season with 2 g of the salt, shape into four short logs, and chill until firm, about 15 minutes.

Heat the oven to 200°C. Place each chicken breast between sheets of baking paper and gently pound to an even 7–8 mm thickness, taking care not to tear the meat.

Season both sides of the chicken with the remaining salt and Black pepper. Put one chilled butter log in the center of each breast, fold the short sides over it, then roll tightly from a long side to form a sealed parcel. Tuck in loose edges.

Set up three shallow dishes with All-purpose flour, beaten large eggs, and Breadcrumbs. Coat each parcel in flour, dip it in egg, then turn it thoroughly in Breadcrumbs, pressing gently to cover every seam.

Arrange the breaded parcels seam-side down on a lightly oiled baking tray and chill for 10 minutes to firm the coating. Bake for 22–25 minutes without moving them, until deeply golden and the thickest part reaches 74°C.

Rest the Chicken Kyiv for 5 minutes before serving. Cut one parcel at the table or just before plating to reveal the garlic butter center.
