Stir in the berbere and tomato paste with the remaining 20 g niter kibbeh. Cook for 3 minutes, stirring constantly, until the paste darkens slightly and smells toasted rather than raw.

Add the chicken and salt, turning each piece through the spice paste until coated. Cook for 5 minutes, stirring once or twice, until the chicken loses its raw exterior color.

Pour in the stock and bring it to a gentle boil. Reduce the heat to low, cover partially, and simmer for 40 to 45 minutes, stirring every 10 minutes, until the chicken is tender and reaches 74°C/165°F at the center.

Nestle the peeled hard-boiled eggs into the sauce and simmer uncovered for 8 minutes, turning them once, until they are hot and stained orange-red by the stew.

Stir in the lemon juice and taste for salt and heat. Rest the stew off the heat for 5 minutes, then serve hot with injera or another flatbread.
