Cómo preparar

1
Toss the cabbage with half the salt and let it stand for 10 minutes. Squeeze it firmly in a clean towel until little liquid remains.
2
Mix the cabbage, pork, scallion, ginger, garlic, soy sauce, sesame oil, and remaining salt in a bowl until tacky and evenly combined, about 2 minutes.
3
Place about 2 teaspoons filling in the center of each wrapper. Moisten the rim, fold the wrapper over, and pleat one side to seal each dumpling firmly.
4
Heat a large nonstick skillet over medium-high heat. Add the oil and arrange half the gyoza flat-side down with a little space between them; sear for 2 minutes until the bottoms are golden.
5
Pour 60 ml water around the dumplings, immediately cover, and simmer for 6 to 7 minutes until the wrappers are translucent and the pork reaches 74°C at the center.

6
Remove the lid and cook for 1 to 2 minutes until the water evaporates and the bottoms become deeply crisp. Repeat with the remaining gyoza and water.
7
Mix the rice vinegar with soy sauce to taste. Transfer the hot gyoza to a platter, crisp-side up, and serve immediately with the dipping sauce.

Por qué funciona esta receta

Salting and draining the cabbage concentrates its flavor while preserving the filling’s moisture balance. A covered simmer steams the wrappers and cooks the pork, followed by uncovered frying to create the signature crisp base.

Conservación y recalentado

Cómo conservarla

Refrigerate cooked gyoza in an airtight container for up to 3 days. Freeze uncooked assembled gyoza in a single layer, then transfer to a sealed bag for up to 1 month; cook from frozen without thawing.

Cómo recalentarla

Reheat refrigerated gyoza in a lightly oiled covered skillet over medium heat with 2 tablespoons water until steaming hot, about 5 minutes. Frozen gyoza can be cooked directly in the skillet, adding 2 to 3 extra minutes of covered simmering.
