Remove the saucepan from the heat and let the syrup cool undisturbed until it reaches about 43°C, 20 to 30 minutes. It should be warm but no longer hot enough to steam.

Add the vanilla extract and beat the mixture with a wooden spoon for 4 to 6 minutes, until it loses its high gloss, thickens noticeably, and leaves defined ridges when stirred.

Scrape the fudge into the prepared pan and smooth the surface quickly. Cool at room temperature for 2 hours, then refrigerate for 1 hour until firm. Lift it out by the parchment and cut into 24 squares.
