Reduce the heat to medium and add the remaining olive oil. Add the sliced garlic and cook for 30 to 45 seconds, just until fragrant and pale golden; do not let it brown.

Stir in the crushed tomatoes, remaining salt, and black pepper. Bring the sauce to a gentle bubble, then simmer uncovered for 18 to 20 minutes, stirring occasionally, until slightly thickened and glossy.

Meanwhile, bring a large pot of well-salted water to a rolling boil. Add the spaghetti and cook according to the package directions until al dente, usually 1 minute less than the shortest suggested time. Reserve 180 ml of pasta water, then drain.

Add the drained spaghetti to the tomato sauce with 60 ml of the reserved pasta water. Toss over medium heat for 1 to 2 minutes until the sauce clings to the strands, adding more water a splash at a time if needed.

Fold in the fried eggplant and torn basil, taking care not to crush the eggplant. Taste and adjust the seasoning; the ricotta salata will add more salt at the finish.

Divide the pasta among four warm bowls. Top with the grated ricotta salata and extra basil, then serve immediately while the sauce is glossy and the eggplant is warm.
