Cómo preparar

1
Remove any remaining giblets, then pat the chicken completely dry with paper towels. Loosen the skin over the breasts and thighs with your fingers without tearing it, and place the chicken breast-side up on a rack or plate while you prepare the marinade.
2
Mix the aji amarillo paste, lime juice, garlic, olive oil, cumin, oregano, 1 teaspoon of the salt, and the black pepper in a small bowl until smooth and glossy.
3
Rub about two-thirds of the marinade under the chicken skin and over the flesh. Rub the remaining marinade over the outside, then season the cavity with the remaining salt. Marinate uncovered in the refrigerator for at least 4 hours or overnight.
4
Take the chicken from the refrigerator 30 minutes before roasting. Heat the oven to 230°C. Arrange the onion wedges in a roasting pan and place the chicken breast-side up on top.
5
Roast at 230°C for 20 minutes, then reduce the oven to 190°C and continue roasting for 50 to 60 minutes, rotating the pan once, until the skin is deeply browned and the thickest thigh reaches 74°C.

6
Transfer the chicken to a cutting board and rest uncovered for 15 minutes so the juices redistribute. Squeeze the roasted onions gently with a spoon to release their juices into the pan.
7
Carve the chicken, arrange it with the roasted onions, and spoon over the pan juices. Serve hot with lime wedges.

Por qué funciona esta receta

Aji amarillo supplies fruity heat, while garlic, cumin, oregano, and lime create the aromatic profile associated with Peruvian pollo a la brasa. Starting at high heat renders the skin, and the onion bed gently perfumes the pan juices.
