Remove the skillet from the heat and stir in the lime juice and cilantro. Taste and adjust the salt, then let the filling stand for 5 minutes so it cools slightly and becomes easier to spread.

Lay out the tortillas. Spread one-eighth of the filling over half of each tortilla, leaving a 1 cm border. Sprinkle each with one-eighth of the grated cheese, then fold the tortilla over to form a half-moon.

Wipe out the skillet and return it to medium heat. Brush the surface lightly with some of the remaining olive oil. Cook two quesadillas at a time for 2 to 3 minutes per side, pressing gently with a spatula, until golden brown and the cheese is fully melted. Add a little more oil as needed.

Transfer the quesadillas to a board and rest for 2 minutes so the cheese sets slightly. Cut each into three wedges and serve hot with lime wedges, salsa, and crema if desired.
