Cómo preparar

1
Pat the cod dry, then season both sides with half of the salt and the black pepper. Coat lightly with the flour and shake off the excess so only a thin film remains.
2
Heat 1 tablespoon of the oil in a wide skillet over medium heat. Fry the fish for 2 minutes per side, just until lightly golden; it will finish cooking later. Transfer to a plate.
3
Add the remaining oil to a large saucepan over medium heat. Saute the onion for 4 minutes until translucent, then add the grated carrot, parsley root, and celery root. Season with the remaining salt and cook for 6 minutes, stirring, until the vegetables soften.
4
Pour in the passata and add the bay leaf and allspice. Bring to a gentle boil, then simmer uncovered for 12 minutes, stirring occasionally, until the vegetables are tender and the sauce is thick enough to mound slightly on a spoon.

5
Remove the bay leaf and allspice. Stir in the lemon juice, taste, and adjust the seasoning if needed. Cool the sauce for 5 minutes so it is hot but no longer bubbling vigorously.
6
Spread one-third of the vegetable sauce in a shallow serving dish. Arrange the fish over it, cover with the remaining sauce, and gently press the layers together without breaking the fillets.

7
Cover and rest the dish for at least 20 minutes, or refrigerate it for several hours for a more developed flavor. Before serving, check that the thickest fish portion is opaque and reaches 74°C/165°F; serve warm, cool, or chilled.

Por qué funciona esta receta

Slowly simmered root vegetables provide sweetness and gentle acidity, while lightly floured fish adds a tender, savory center without competing with the sauce. Resting lets the flavors meld and makes the dish especially suitable for preparing ahead.
