Whisk the flour, sugar, and salt together in a medium bowl. In a separate bowl, whisk the milk, eggs, melted butter, and vanilla until smooth and evenly combined.

Gradually whisk the liquid mixture into the flour mixture, starting in the center and widening the motion until the batter is smooth and fluid. Strain it through a fine sieve if any small lumps remain.

Cover the batter and let it rest at room temperature for 20 to 30 minutes. After resting, whisk briefly; it should have the consistency of light cream. If it has thickened noticeably, whisk in 1 to 2 tablespoons of milk.

Heat a 20 cm nonstick skillet over medium heat for 2 minutes. Lightly brush it with oil, then wipe away any visible excess so the surface is only thinly coated.

Pour about 60 ml of batter into the center of the hot skillet and immediately swirl the pan to spread it into a thin, even round. Cook for 45 to 60 seconds, until the surface looks set and the underside is lightly golden.

Loosen the edges with a flexible spatula, flip the crêpe, and cook for 20 to 30 seconds more, until the second side has a few pale golden spots. Transfer it to a plate and continue with the remaining batter, lightly greasing the pan only when needed.

Stack the warm crêpes and fold or roll them while pliable. Serve immediately with the desired filling or topping.
