Preheat the oven to 180°C. Soak the torn bread in 60 ml of the milk for 5 minutes, then mash it into a soft paste.

Heat the oil in a 25 cm ovenproof skillet over medium heat. Add the onion and cook for 6–8 minutes until soft and translucent, then add the garlic and cook for 30 seconds.

Add the ground beef and cook for 7–9 minutes, breaking it up, until no pink remains and the meat reaches 74°C. Drain excess fat if necessary.

Stir in the curry powder, turmeric, apricots, chutney, bay leaf, mashed bread, and 120 ml of the remaining milk. Simmer gently for 8 minutes, stirring occasionally, until thick and fragrant. Remove the bay leaf and season with half the salt.

Whisk the eggs with the remaining 60 ml milk and remaining salt until smooth. Pour the custard evenly over the hot mince.

Bake for 25–30 minutes, until the custard is set at the edges and only barely quivers in the center. The center should reach 74°C for safe egg doneness.

Rest the bobotie for 10 minutes so the custard firms, then cut into wedges and serve warm with yellow rice or salad.
