Stir in the soaked fruit, grated apple, sifted flour, breadcrumbs, cinnamon, cloves, nutmeg, salt, and the remaining 30 ml brandy. Mix just until no dry pockets remain; the batter should be thick and spoonable.

Spoon the batter into the greased basin, pressing it firmly into the corners to eliminate air pockets. Level the top with the back of a spoon, leaving 2 cm of headspace. Cover with a pleated round of baking parchment, then foil, and tie the coverings tightly under the basin rim so they remain secure during steaming.

Lower the basin onto the steamer trivet. Cover tightly and steam for 5 hours, maintaining a gentle simmer. Check every 45 minutes and add boiling water when needed so the pot never runs dry.

Lift out the basin carefully and cool for 20 minutes. Remove the foil and parchment, invert the pudding onto a warmed serving plate, and let it stand for 5 minutes before serving with the accompaniment of your choice.
