Place the pork slices between two sheets of baking paper and pound them with the flat side of a mallet until each is about 5 mm thick. Trim any ragged edges, then season both sides with the salt and pepper.

Set up three shallow dishes: flour in the first, beaten egg in the second, and breadcrumbs in the third. Coat each pork slice in flour, dip it in egg, and press it gently into the breadcrumbs until evenly covered. Rest the breaded cutlets for 5 minutes.

Heat half of the sunflower oil and half of the butter in a large heavy skillet over medium heat. When the butter foams and the oil shimmers, add two cutlets without crowding the pan.

Fry the cutlets for 3 to 4 minutes on the first side, adjusting the heat so the crumbs turn deep golden rather than dark brown. Turn them once and fry for another 3 to 4 minutes, until crisp and the pork reaches 74°C at the center.

Transfer the cooked cutlets to a wire rack or paper-lined plate. Wipe out loose crumbs if needed, add the remaining oil and butter, and fry the remaining two cutlets in the same way.

Rest all four cutlets for 2 minutes so the juices settle, then serve immediately with lemon wedges and your chosen potato and cucumber sides.
