Pour the maple syrup into a heavy 2-litre saucepan. If desired, rub butter around the inside rim to reduce foaming. Clip a candy thermometer to the pan, keeping the bulb below the syrup surface without touching the base.

Bring the syrup to a boil over medium heat, then reduce the heat to maintain a steady simmer. Cook uncovered until it reaches 112–115°C, about 10–15 minutes; the bubbles will become slower and larger and the syrup will look noticeably thicker.

Remove the saucepan from the heat and let the syrup stand for 2 minutes, until the bubbling subsides but the syrup remains fluid. Work carefully because the syrup is extremely hot.

Remove the snow from the freezer. Pour a thin 10 cm strip of hot syrup onto the snow, wait 5–10 seconds, then roll it around a wooden stick or fork. Continue with the remaining syrup, working in small batches, and serve immediately.
