Remove the pan from the heat. Crush about two-thirds of the peas with a potato masher or the back of a wooden spoon, leaving the rest visibly whole for a rustic texture.

Stir in the lemon juice, chopped mint, and remaining 15 g butter. Taste and adjust the salt, then return to low heat for 1 to 2 minutes until glossy and spoonable; do not allow the mixture to boil.

Spoon the peas into a warm serving bowl, dot with any remaining butter, and scatter with mint leaves. Serve immediately while hot and creamy.
