Cook for 5 to 6 minutes, until the bottom is deep golden and the edges look set. Flip carefully with two wide spatulas and cook for another 5 to 6 minutes, until the pork is browned and the pancake reaches 74°C in the center.

Transfer the pancake to a plate and repeat with the remaining oil, batter, and pork. Rest each pancake for 2 minutes so the cabbage interior settles.
