Place the rinsed rice and water in a heavy saucepan and let it stand for 10 minutes so the grains hydrate evenly.

Turn off the heat and leave the rice covered for 10 minutes. Fluff it gently with a rice paddle, then keep it covered while preparing the filling.

Meanwhile, place the salmon in a small saucepan with enough water to cover it. Bring to a gentle simmer and cook for 8 to 10 minutes, until opaque and 63°C at the thickest point. Drain, cool briefly, and flake finely, removing any remaining bones.

Stir half of the salt into the warm rice, then mix the toasted sesame seeds through it without crushing the grains.

Moisten your hands with water and rub them lightly with the remaining salt. Divide the rice into eight portions. Flatten one portion in your palm, place about one-eighth of the salmon in the center, and cover it with another portion of rice.

Press and rotate each portion gently into a compact triangle with rounded edges, using only enough pressure to make it hold together. Wrap each onigiri with a strip of nori and serve warm or at room temperature.

Cool the shaped rice balls completely, wrap each one tightly, and refrigerate for up to 24 hours. Keep nori separate until serving. Do not leave cooked rice at room temperature for more than 2 hours.

Remove wrapping and microwave one onigiri under a damp paper towel for 30 to 45 seconds, until steaming hot throughout. Add nori after reheating.
