Comment préparer

1
Lightly grease a 12-cup muffin tin. Roll the cold puff pastry into a tight log, about 5 cm in diameter, then cut it into 12 equal rounds. Place one round cut-side up in each cup and press it outward with damp fingertips until it forms a thin shell rising slightly above the rim. Chill for 20 minutes.

2
Combine the sugar, water, cinnamon stick, and lemon peel in a small saucepan. Bring to a boil over medium-high heat, then simmer for 3 minutes without stirring, until the syrup is clear and slightly thickened. Remove from the heat and discard the lemon peel and cinnamon.
3
Whisk the milk, cornstarch, and salt in a second saucepan until smooth. Cook over medium heat, whisking constantly, for 4 to 5 minutes, until the mixture thickens enough to coat the whisk. Remove from the heat.
4
Whisk the hot sugar syrup gradually into the thickened milk mixture. Let it cool for 8 to 10 minutes, whisking occasionally, until warm rather than steaming. Whisk in the egg yolks until completely smooth; do not add them while the mixture is piping hot.
5
Heat the oven to 250°C, or its highest setting, with a rack in the upper third. Pour the custard into the chilled pastry shells, filling each about three-quarters full. Bake for 12 minutes, then rotate the tin and bake for 5 to 8 minutes more, until the pastry is deeply golden and the custard is set around the edges with dark caramelized spots on top.

6
Cool the tarts in the tin for 5 minutes, then loosen the edges and transfer them to a rack. Serve warm or at room temperature; the custard will finish setting as it cools.

Pourquoi cette recette fonctionne

A briefly simmered lemon-and-cinnamon syrup perfumes the custard without making it watery, while a hot oven sets the filling quickly and creates the characteristic caramelized freckles over crisp, layered pastry.

Conservation et réchauffage

Comment la conserver

Cool completely, then refrigerate in a covered container for up to 3 days. For the best texture, do not stack the tarts without parchment between layers.

Comment la réchauffer

Reheat uncovered in a 200°C oven for 5 to 7 minutes, until the pastry is crisp and the centers are warm. Avoid microwaving, which softens the pastry.
