Heat the oven to 200°C, or 180°C fan, and lightly oil a large rimmed baking tray. Pat the sausages and bacon dry so the bacon browns rather than steams.

Mix the Dijon mustard, chopped sage, and black pepper in a small bowl. Spread a thin layer over each sausage, keeping the coating light so it does not burn.

Wrap one bacon slice around each sausage, overlapping the ends underneath. Place the wrapped sausages seam-side down on the prepared tray with a little space between them.

Bake for 30–35 minutes, turning once halfway through, until the bacon is deeply golden and crisp and the thickest sausage reaches 74°C at the center.
