Stir the lukewarm water, honey, and yeast together in a large bowl. Leave for 5 minutes, until the yeast is lightly foamy; if it does not foam, replace it before continuing.

Add the bread flour, salt, and olive oil. Mix with a wooden spoon until a shaggy dough forms and no dry flour remains, about 2 minutes.

Turn the dough onto a lightly floured surface and knead for 8 to 10 minutes, pushing and folding until smooth, elastic, and slightly tacky. Shape it into a ball.

Coat a bowl with a little oil, place the dough inside, and turn it once to coat. Cover and rest at room temperature for 60 to 90 minutes, until visibly puffy but not necessarily doubled.

Divide the dough into two equal portions, about 425 g each. Shape each into a tight ball, place in lightly oiled covered containers, and refrigerate for at least 12 hours and up to 72 hours. Bring the portions to room temperature for 60 to 90 minutes before baking.

Heat the oven with a pizza steel, stone, or heavy baking sheet inside to its highest setting, ideally 250°C or hotter, for at least 45 minutes. Stretch one dough ball into a 28 to 30 cm round, keeping a slightly thicker rim, add toppings, and bake for 8 to 12 minutes until the edge is deeply golden and blistered and the underside is crisp. Repeat with the second portion.
