Prepare a two-zone charcoal grill, with a hot side and a cooler side. Let the coals become mostly gray and heat the grate for 5 minutes.

Mix the parsley, garlic, red wine vinegar, olive oil, oregano, and 1/2 teaspoon of the salt in a bowl. Rest the chimichurri for at least 20 minutes so the herbs soften and the flavor rounds out.

Season the short ribs, flank steak, and sausages with the remaining salt. Place the short ribs on the cooler side of the grill, bone-side down, and cook for 20 to 25 minutes, turning occasionally, until deeply browned and the ribs reach at least 63°C in the thickest part.

Move the short ribs to the hot side for 2 to 3 minutes per side to crisp the edges. Grill the flank steak over high heat for 4 to 6 minutes per side, until it reaches 54 to 57°C for medium-rare or your preferred doneness.

Grill the sausages over medium heat for 12 to 15 minutes, turning every few minutes, until browned all over and 74°C at the center. Grill the lemon halves cut-side down for 2 minutes until lightly charred.

Transfer all the meat to a board and rest for 8 minutes. Slice the flank steak thinly across the grain and cut the sausages into thick pieces.
