Press two-thirds of the dough firmly and evenly over the base of the prepared pan, then build a 3 cm-high side wall, sealing any cracks so the liquid filling cannot escape. Chill the lined pan for 15 minutes while preparing the filling, and keep the reserved dough cold.

Whisk the quark, remaining 100 g sugar, 2 eggs, vanilla, lemon zest, and cornstarch until smooth and glossy, with no visible streaks of egg or starch.

Pour the filling into the chilled pastry shell and level the surface. Pinch the reserved dough into small uneven pieces and scatter them over the filling, leaving some pale quark visible between the chocolate pieces.

Bake on the center rack for 50 to 55 minutes; this is the baking time and excludes cooling and chilling. The edges should be set, the center should have only a slight wobble, and the pastry pieces should be matte and firm. Do not let the filling brown deeply.

Leave the cake in the pan until completely cool, about 2 hours, then refrigerate for at least 4 hours or overnight so the quark layer firms. Run a thin knife around the edge, remove the ring, and cut into 12 slices to serve.
