Bring a wide pot of salted water to a gentle simmer. Cook the dumplings in 2 or 3 batches for 2 to 3 minutes after they rise to the surface, then lift them out with a slotted spoon and drain.

Melt the butter in a large skillet over medium heat. Add the sage and breadcrumbs and cook for 3 to 4 minutes, stirring, until the butter smells nutty and the crumbs are golden. Add the drained dumplings, toss for 1 to 2 minutes to coat, and finish with Parmesan.
