Place the pork, three quarters of the onion, three garlic cloves, 1 teaspoon oregano, and 1 teaspoon salt in a large Dutch oven. Add 2.5 liters of cold water and bring to a boil over medium-high heat, skimming foam from the surface.

Reduce the heat to low, cover partially, and simmer for 75 minutes, or until the pork is beginning to become tender but is not yet falling apart.

Meanwhile, toast the guajillo and árbol chiles in a dry skillet over medium heat for 30 to 45 seconds per side, just until fragrant and pliable. Transfer them to a bowl, cover with hot water, and soak for 15 minutes.

Blend the soaked chiles with the remaining garlic, the remaining quarter onion, 250 ml of their soaking water, and 1 teaspoon oregano until completely smooth. Strain the sauce through a fine sieve, pressing firmly on the solids.

Pour the strained chile sauce into the pork pot and add the hominy. Return to a gentle simmer, partially cover, and cook for 55 to 65 minutes, stirring occasionally, until the pork is fork-tender, the hominy is plump, and the pork reaches at least 74°C/165°F.

Taste and adjust the salt. Ladle the pozole into warm bowls and top with shredded cabbage, sliced radishes, chopped cilantro, and a pinch of oregano. Serve immediately with lime wedges and the reserved onion.
