Stir the warm water, 5 g of the sugar, and yeast in a large bowl. Let stand for 5 to 10 minutes, until a creamy foam forms on the surface.

Add the flour, salt, remaining sugar, and melted butter. Mix until a shaggy dough forms, then knead on a lightly floured surface for 6 to 8 minutes, until smooth and springy.

Place the dough in a lightly oiled bowl, cover, and let it rest in a warm, draft-free spot for about 1 hour, until doubled in size.

Turn the dough out, divide it into 8 equal pieces, and shape each into a ball. Cover and rest for 10 minutes so the dough relaxes.

Heat the vegetable oil in a deep, heavy pot to 175°C. Stretch each dough ball into a thin oval about 15 cm long, leaving it slightly thicker at the edges.

Fry the pastries one or two at a time for 1 to 2 minutes per side, turning once, until puffed and deep golden brown. Keep the oil between 170°C and 180°C.

Transfer each pastry to a rack or paper-lined tray to drain briefly. While still warm, toss with the remaining sugar mixed with the cinnamon.
