Mix in the melted butter with a fork, then add the warm water and stir until a soft, crumbly dough forms. Press it together with your hands; if it will not hold, add water 1 teaspoon at a time.

Transfer the dough to a lightly floured sheet of parchment and press or roll it to 6 mm thick. Cut twelve rounds with a 7 cm cutter, gathering and rerolling scraps once.

Arrange the rounds on the prepared sheet with 2 cm between them. Bake for 16 to 18 minutes, rotating the sheet halfway, until the edges are golden and the centers look dry but still slightly soft.

Cool the oatcakes on the baking sheet for 5 minutes, then transfer them to a rack and cool completely. They will firm and become crisp as they reach room temperature.
