Add the garlic and cook for 30 seconds, until fragrant. Whisk in the remaining 180 ml evaporated milk and the salt, then bring it just to a gentle simmer; do not let it boil.

Lower the heat and add the cheese mixture one small handful at a time, whisking constantly and waiting for each addition to melt before adding more. Continue for 4 to 5 minutes, until the queso is glossy and thick enough to coat a spoon.

Remove the saucepan from the heat and fold in the diced tomato, cilantro, and lime juice. Taste and adjust the salt while the dip is still warm and fluid.
