Stir in the shredded Savoy cabbage and simmer for 10 to 12 minutes, until the cabbage is tender but still green and the lamb reaches at least 74°C at the center.

Taste and adjust the seasoning. If the broth is thicker than desired, add hot water a little at a time; it should coat a spoon lightly while remaining pourable.
