Add the flour, salt, egg, and softened butter. Mix with a dough hook on low speed until no dry flour remains, then knead on medium speed for 7 to 8 minutes, until the dough is smooth, elastic, and slightly tacky.

Shape the dough into a ball, place it in a lightly greased bowl, and cover. Let it rise in a warm, draft-free place for 60 to 75 minutes, until doubled in volume.

Turn the dough onto a lightly floured surface and divide it into 12 equal pieces, about 72 g each. Shape each piece into a taut ball and arrange them on a parchment-lined tray, leaving space between them.

Cover the tray loosely and proof the dough balls at about 24–27°C for 30–40 minutes, until they look noticeably puffy and nearly doubled. Gently press one with a fingertip: it should spring back slowly, leaving a slight indentation. If it springs back immediately, proof for 5 more minutes and test again; if the indentation stays deep, fry them promptly.

Heat the oil in a deep, heavy saucepan to 170°C. Fry the doughnuts in batches of 2 or 3 for about 2 minutes per side, turning once, until evenly golden brown and cooked through; maintain the oil between 170°C and 175°C.

Transfer the doughnuts to a paper-lined rack and cool for 10 minutes. Spoon the raspberry jam into a piping bag fitted with a small round tip, pierce the side of each doughnut, and pipe in about 15 g of jam.

Roll the filled doughnuts in extra granulated sugar or dust them with confectioners' sugar. Serve the same day while the crust is delicate and the center is soft.
