Whisk the lukewarm water, instant yeast, and fine sea salt in a large bowl. Add 30 ml of the olive oil and the bread flour, then mix with a sturdy spoon until no dry flour remains and a sticky dough forms, about 2 minutes.

Cover the bowl and rest the dough at room temperature for 20 minutes. With wet hands, fold the dough from each side toward the center 4 times; cover again and repeat this folding once more after another 20 minutes, until the dough feels smoother and elastic.

Cover the bowl tightly and refrigerate for 12 to 24 hours. The dough should expand noticeably and show bubbles on its surface.

Coat a 23-by-33-cm metal baking pan with 15 ml of the olive oil. Scrape in the chilled dough, turn it once to coat, and gently stretch it toward the corners. Cover and rest at room temperature for 1 to 2 hours, until puffy and relaxed.

Heat the oven to 230°C. Drizzle the remaining 15 ml of olive oil over the dough. Oil your fingertips and press straight down repeatedly to make deep dimples across the entire surface without deflating the dough. Sprinkle evenly with the chopped rosemary and flaky sea salt.

Bake on the middle rack for 22 to 25 minutes, rotating the pan halfway through, until the focaccia is deeply golden, the edges are crisp, and the center reaches at least 95°C.

Cool the focaccia in the pan for 15 minutes, then loosen the edges with a spatula and transfer it to a rack. Cut into squares and serve warm or at room temperature.
