Stir in 30 g of the butter, the grated nutmeg, and the salt. Taste and adjust the seasoning; the sauce should be mellow, fragrant, and loose enough to fall from a spoon. Add a splash of milk if necessary.

Transfer to a warmed serving bowl, dot with the remaining 10 g butter, and serve warm. If holding for up to 30 minutes, cover the surface closely and keep it over very low heat or in a warm place, stirring once before serving.
