Pour in 400 ml of the wine, scraping up the browned bits. Simmer for 3 minutes, then return the bacon and chicken to the pot with the stock, thyme, and bay leaf.

Bring the liquid just to a simmer, cover, and cook gently for 55 minutes, turning the chicken once, until tender and at least 74°C in the thickest piece.

While the chicken braises, heat a large skillet over medium-high heat. Add the pearl onions and mushrooms with 2 tablespoons of water, cover, and cook for 5 minutes. Uncover and cook for 6 to 8 minutes until tender and browned.

Transfer the chicken to a warm plate. Remove the thyme sprigs and bay leaf, then simmer the sauce uncovered for 8 to 10 minutes until slightly thickened. Stir in the remaining 100 ml wine and simmer for 2 minutes.

Return the chicken, pearl onions, mushrooms, and bacon to the sauce. Warm gently for 3 minutes, taste and adjust the seasoning, then rest for 5 minutes before serving with fresh thyme leaves.
