Reduce the heat to low. Stir in the cream and remaining 10 g butter, then warm for 2 minutes without boiling. Taste and adjust with the remaining salt and black pepper.

Stir in the cider vinegar and half of the chives. Rest the soup off the heat for 3 minutes so the broth settles and the flavors become rounded.
