Combine the lukewarm milk, yeast, 1 tablespoon of the sugar, and 120 g of the flour in a large bowl. Stir until smooth, cover, and rest for 15 minutes, until lightly foamy.

Mix in the remaining sugar, the beaten eggs, melted butter, and remaining flour. Knead for 6 to 8 minutes, until the dough is smooth and elastic. Cover and rest in a warm place for 60 to 75 minutes, until doubled.

While the dough rises, place the poppy seeds in a saucepan and cover with water by 2 cm. Boil for 10 minutes, drain very well, and grind or blend until the seeds look moist and finely broken.

Return the ground poppy seeds to the saucepan with the honey, walnuts, candied orange peel, vanilla, and lemon zest. Simmer over low heat for 5 to 7 minutes, stirring often, until thick enough to hold a track from the spoon. Cool to room temperature.

Heat the oven to 180°C. Turn the risen dough onto a lightly floured surface and roll it into a rectangle about 30 by 40 cm. Spread the cooled filling evenly, leaving a 2 cm border on all sides.

Roll the dough up from one long side into a snug log and pinch the seam closed. Place it seam-side down on a parchment-lined baking sheet, cover, and rest for 25 to 30 minutes, until slightly puffy. Brush with the reserved egg.

Bake for 35 to 40 minutes, rotating once, until deeply golden and the loaf sounds hollow when tapped. Cool completely on a rack before slicing into spirals.
