Whisk in the egg, then gradually mix in the flour and remaining sugar until a thick, smooth batter forms. Cover and leave in a warm place for 45 to 60 minutes, until doubled and visibly bubbly.

Put the diced apples and lemon juice in a small saucepan. Cover and simmer over medium-low heat for 4 to 5 minutes, stirring once, until just tender but still holding their shape. Cool for 10 minutes.

Fold the cooled apples and any pan juices into the risen batter. Rest for 10 minutes while the batter becomes slightly aerated again.

Heat a large nonstick skillet over medium heat. Add a little butter and sunflower oil; the fat should shimmer but not smoke.

Drop generous 60 ml portions of batter into the skillet, leaving space between them. Fry for 2 to 3 minutes per side, adding more butter and oil as needed, until puffed, deep golden, and cooked through at the center.
