Combine the cooled espresso and coffee liqueur in a shallow dish. Set a heatproof bowl over a saucepan containing 2–3 cm of barely simmering water, making sure the bowl does not touch the water.

Whisk the pasteurized egg yolks and sugar in the heatproof bowl for 6–8 minutes, until pale, thick, and glossy and the mixture reaches 71°C. Remove the bowl from the heat and whisk for 2 minutes more to cool it slightly.

Whisk the mascarpone and vanilla into the warm egg mixture in three additions, stopping as soon as the cream is smooth. Do not overmix, or the mascarpone may loosen.

In a separate chilled bowl, whisk the heavy cream to soft peaks. Fold it gently into the mascarpone mixture in two additions until no white streaks remain.

Dip each ladyfinger into the espresso mixture for about 1 second per side, letting excess coffee drip off. Arrange half of them in a single layer in a 23-by-33-cm serving dish.

Spread half of the mascarpone cream over the ladyfingers and smooth the surface. Repeat with the remaining dipped ladyfingers and mascarpone cream, then cover and refrigerate for at least 6 hours, preferably overnight.

Sift the cocoa powder evenly over the chilled tiramisu just before cutting into 8 portions. Serve cold, using a sharp knife wiped clean between cuts.
