Comment préparer

1
Sift the flour and salt into a bowl. Make a well in the center, crack in the eggs, and whisk while gradually drawing in the flour. Add the milk in a steady stream and whisk until the batter is smooth and the consistency of single cream.
2
Cover the bowl and rest the batter for at least 30 minutes at room temperature, or refrigerate for up to 12 hours. If chilled, let it stand at room temperature for 30 minutes and whisk briefly before using.
3
Place a 12-cup metal muffin tin in the oven and heat to 230°C conventional or 210°C fan. Divide the beef dripping among 6 cups, using about 1 teaspoon per cup, and heat for at least 8 minutes until visibly shimmering and nearly smoking.

4
Remove the tin carefully and pour the batter evenly into the six hot cups, filling each about two-thirds full. Work quickly so the fat stays hot, then return the tin to the oven without delay.
5
Bake for 20 to 25 minutes without opening the oven, until the puddings are tall, deeply golden, and crisp around the edges. Serve immediately while the centers are light and the shells are at their crispest.

Pourquoi cette recette fonctionne

A thin batter of flour, eggs, and milk rises dramatically when poured into smoking-hot fat. Resting hydrates the flour, while the hot metal and fat create the signature crisp shell before the center sets.

Conservation et réchauffage

Comment la conserver

Cool leftovers completely, refrigerate in an airtight container for up to 2 days, or freeze for up to 1 month.

Comment la réchauffer

Reheat from chilled or frozen in a 200°C oven for 5 to 10 minutes, until hot and crisp; avoid microwaving, which softens the crust.
