Cullen Skink

A classic Scottish soup of smoked haddock, waxy potatoes, onion, and whole milk. Gentle simmering preserves the fish’s delicate smoke while the potatoes give the broth a naturally creamy body.

Come preparare

1
Melt 20 g of the Unsalted butter in a heavy 3-liter saucepan over medium-low heat. Add the yellow onion and cook for 6 to 8 minutes, stirring occasionally, until translucent and soft but not browned.
2
Add the Waxy potato, fish stock, and whole milk. Bring just to a gentle simmer, then reduce the heat and cook uncovered for 15 to 18 minutes, until the potatoes are tender when pierced but still hold their shape.
3
Lower the heat and add the smoked haddock pieces. Cover and simmer gently for 6 to 8 minutes, turning the pieces once, until the fish is opaque and flakes easily at the thickest point.

4
Lift out about one-third of the haddock pieces and set them aside briefly. Stir in the remaining 10 g of Unsalted butter, then crush several potato cubes against the side of the pan to lightly thicken the broth. Season with fine sea salt and White pepper, tasting carefully before adding more salt.
5
Return the reserved haddock to the saucepan and warm for 1 minute without boiling. Fold in the Flat-leaf parsley, then check that the soup is steaming hot and the fish remains in generous flakes.
6
Ladle the Cullen Skink into warmed bowls, distributing the haddock evenly. Serve immediately with buttered bread.

Perché questa ricetta funziona

The potatoes release just enough starch to enrich the milk without requiring flour, while smoked haddock supplies both seasoning and a deep savory aroma. Adding the fish near the end keeps its flakes moist and distinct.

Conservazione e riscaldamento

Come conservarla

Cool the soup promptly, refrigerate it in a covered container, and use within 2 days. Do not leave it at room temperature for more than 2 hours.

Come riscaldarla

Reheat gently in a saucepan over low to medium heat, stirring often, until steaming hot throughout; do not boil, or the milk may split and the fish may toughen.
