Place the firm dough in a lightly oiled bowl, turning once to coat. Cover tightly and let it rise at room temperature for 60 to 75 minutes, until it has expanded by about half, feels airy beneath the surface, and springs back slowly when pressed with a fingertip; it does not need to double.

Divide the dough into 8 equal pieces. Roll each piece into a rope about 25 cm long, wrap it around your hand, overlap the ends beneath your palm, and roll briefly to seal. Stretch the center opening to about 5 cm. Place the shaped bagels on a cornmeal-dusted sheet, cover, and rest for 15 minutes.

Heat the oven to 245°C and place a baking sheet or baking stone inside to preheat. Bring a wide pot of water and the remaining honey to a gentle boil. Boil the bagels in batches for 45 seconds per side, turning once; they should float and look slightly tightened.

Transfer the boiled bagels to a parchment-lined baking sheet, sprinkle generously with sesame seeds, and slide the sheet onto the preheated surface. Bake for 10 minutes, rotate the sheet, then bake for 8 to 12 minutes more, until richly golden brown and firm on the bottom.
