Nestle the pork loin into the sauerkraut. Cover, reduce the heat to low, and simmer for 55 minutes, turning the pork once, until the pork reaches 63°C at the center.

Place the smoked sausage and fresh bratwurst on top of the sauerkraut. Cover and simmer for 20 to 25 minutes, turning the fresh bratwurst once, until it is firm and reaches 74°C internally.

Transfer the pork to a cutting board and rest it for 5 minutes. Remove the bay leaves, then taste the sauerkraut and adjust the seasoning only if needed.

Slice the rested pork and arrange it with the smoked sausage, bratwurst, bacon, and sauerkraut on a warm platter. Serve immediately with mustard and boiled potatoes.
