Heat the oven to 160°C. Line the base of a 23 cm springform pan with parchment and lightly butter the sides. Mix the biscuit crumbs with 70 g of the melted butter, press the mixture firmly over the base, and chill while preparing the filling.

Combine the raisins and water in a small saucepan. Bring to a gentle simmer over medium heat and cook for 5 minutes, until the fruit is plump and only a little liquid remains. Drain thoroughly and cool to lukewarm.

Beat the farmer cheese and sugar on low speed until smooth, scraping the bowl once. Add the eggs one at a time, mixing only until incorporated, then mix in the sour cream, cornstarch, lemon zest, and 2 tablespoons of lemon juice. Avoid whipping air into the batter.

Fold the cooled raisins into the filling, reserving a few for the surface. Pour the mixture over the chilled crust, level the top, and scatter over the reserved raisins.

Bake on the middle rack for 60 to 70 minutes, until the edges are set and lightly golden while the center still trembles slightly when the pan is nudged. The internal temperature should be about 74°C.

Turn off the oven, prop the door open, and let the cake cool inside for 30 minutes. Cool completely on a rack, then cover and refrigerate for at least 4 hours before removing the ring and slicing.

Slice with a warm, dry knife and serve chilled or allow individual slices to stand at room temperature for 15 minutes before serving.
