Tiramisu

A classic Italian tiramisu layered with espresso-soaked ladyfingers and a light mascarpone cream, finished with a bittersweet veil of cocoa. Pasteurized eggs are gently warmed over simmering water for a safer, silky custard.

Come preparare

1
Combine the cooled espresso and coffee liqueur in a shallow dish. Set a heatproof bowl over a saucepan containing 2–3 cm of barely simmering water, making sure the bowl does not touch the water.
2
Whisk the pasteurized egg yolks and sugar in the heatproof bowl for 6–8 minutes, until pale, thick, and glossy and the mixture reaches 71°C. Remove the bowl from the heat and whisk for 2 minutes more to cool it slightly.
3
Whisk the mascarpone and vanilla into the warm egg mixture in three additions, stopping as soon as the cream is smooth. Do not overmix, or the mascarpone may loosen.
4
In a separate chilled bowl, whisk the heavy cream to soft peaks. Fold it gently into the mascarpone mixture in two additions until no white streaks remain.
5
Dip each ladyfinger into the espresso mixture for about 1 second per side, letting excess coffee drip off. Arrange half of them in a single layer in a 23-by-33-cm serving dish.
6
Spread half of the mascarpone cream over the ladyfingers and smooth the surface. Repeat with the remaining dipped ladyfingers and mascarpone cream, then cover and refrigerate for at least 6 hours, preferably overnight.

7
Sift the cocoa powder evenly over the chilled tiramisu just before cutting into 8 portions. Serve cold, using a sharp knife wiped clean between cuts.

Perché questa ricetta funziona

Warming the pasteurized egg yolks and sugar over simmering water creates a smooth, stable base, while mascarpone and whipped cream provide richness without heaviness. Espresso softens the ladyfingers and cocoa cuts through the creamy layers.
