Place the chicken breast and chicken stock in a saucepan. Bring to a gentle boil, reduce to a simmer, and cook for 15 to 18 minutes, until the thickest part reaches 74°C. Transfer the chicken to a plate, reserve the stock, and shred the meat finely once cool enough to handle.

Melt the butter in a wide saucepan over medium heat. Add the onion and garlic and sauté for 4 to 5 minutes, until translucent and fragrant. Stir in the shredded chicken, parsley, and 120 ml of the reserved stock; cook for 2 minutes, then mix in the cream cheese until cohesive. Season to taste and cool the filling completely.

Return the remaining reserved stock to the saucepan and bring it to a simmer. Add the flour all at once and stir vigorously with a wooden spoon for 2 to 3 minutes, until the mixture pulls away from the sides and forms a smooth, firm dough. Transfer it to a lightly oiled surface and cool for 10 minutes.

Divide the dough into 12 equal portions. Flatten one portion into a 10 cm round, place about 1 heaped tablespoon of chilled filling in the center, then bring the dough up around it and pinch firmly to seal. Roll and taper the top into a teardrop. Repeat with the remaining dough and filling.

Arrange the shaped coxinha on a tray and chill for 15 minutes. Place the breadcrumbs in a shallow bowl and roll each croquette in them, pressing gently so the coating adheres evenly.

Heat the vegetable oil in a deep, heavy saucepan to 170°C to 180°C. Fry the coxinha in batches for 3 to 4 minutes, turning carefully, until evenly golden brown and crisp. Avoid crowding the pan, which lowers the oil temperature.

Lift the coxinha onto a rack or paper-lined tray and rest for 3 minutes to drain excess oil and settle the filling. Serve hot while the coating is crisp.
